But it tastes lovely too.
It is not, as you would expect, a sweet cake. We've kept some slices in the freezer for using as breakfast on those days when we are getting up and gone early in the morning. Its that kind of cake. Its also very easy to make. The recipe comes from Great British Chefs, with a few tweeks of course...
- 3 eggs
- 1 500g tub of yogurt - I used The collective dairy Passion fruit one
- 2 cups of sugar
- 3 cups of flour - I used a spelt flour and it turned out fine.
- ¾ cup of olive oil
- 15 g of baking powder
- 1 pinch of salt
Heat your oven to 160C. Mix the eggs and sugar together until pale, then add the rest of the "wet" ingredients. Then mix in the flour until you have a nice batter. Pour this into your prepared (greased/lined etc) tin, and bake until knife comes out clean, about 30 minutes or so.
Gorgeous with coffee. Just if you do recreate this passion fruit one, do what I forgot to, and strain out the seeds. That is, unless you want the crunch when you bite into one!
