Ketchup?? Catsup???

I always... always have  the urge to say ketchup like I'm Mr Burns.. is it just me??

Everyone has an opinion on what is the best ketchup. For me its Heinz all the way, but I do really like, when we're out and about, a bit of "rustic" ketchup on a proper beef burger. My father-in-law is currently, actually like every summer, suffering a glut of GORGEOUS tomatoes that were just too much to eat, but ripe for preserving!

Cara's Chilli Ketchup

1 onion, chopped
4 nice big cloves of garlic
1tsp each  whole cumin seeds, fennel seeds &
mixed peppercorns, crushed in a pestle and mortar
2 tsps dried oregano
sea salt
fresh ginger - about 1 1/2 inch bit - 2 thumbs
1 red chilli, chopped finely
 dash lemon oil - or olive oil and lemon zest
bunch of fresh basil, roughly chopped
2kg tomatoes
700ml of water
400ml red wine vinegar
140g sugar - see recipe

Ketchup is fairly simple really - it starts off like making soup. Caramelise the onions & garlic in the oil, before adding  all the seasoning's & chilli except the basil, and fry for about a minute. Then add the tomatoes and the water. Simmer for 15 minutes, then add the chopped basil. Remove from the heat and blend until smooth.

Now, you can sieve the tomato sauce to make it totally smooth, but i like it "rustic". Either way, return the smooth sauce to the pan and add the vinegar and sugar.

Now, according to my brand new flavour thesaurus I got for my birthday, Vanilla goes really well with tomato so I experimented and used my vanilla sugar. Its quite mild now, needs new vanilla pods, so if you wanted to use your own, I'd try 50/50 and add it to the vinegar and taste before you add to the ketchup. I had a slight vanilla taste to mine that wasn't too over powering.

Once everything is in the pan, simmer away, stirring occasionally, until its the consistency you would expect from ketchup. Pour into sterilised bottles and slather on food.
