On the Rocks - Independence Swizzle

Monday is July 4th, which if you are in the English speaking world you most likely recognise as American Independance Day. So, when I was perusing cocktail recipes the other day and came across one with Independance in the name I figured it was meant to be.

The recipe calls for "red berries", but for this I went another way. Given that it was for the good old USA, and whats more American than cherry pie, I used some cherries I'd stabbed a few times (to open the skins) instead.

You will need

1/2 shot fresh lime juice
1 1/2 tsp honey
1 tsp sugar
2 shots amber rum
3 dashes of Angostura bitters
Swizzle stick/straw/something to stir with
handful of cherries (or berries)


I used a rocks/short glass for this (it looked better) but traditionally its meant for a tall glass. Mix the lime, honey and sugar together in the glass until the sugar is dissolved. Fill the glass  with ice, then add the rum and bitters. Stir vigorously with your swizzle until it gets frothy, then add in all the berries you can. 

First time out I noticed that, while the cherries leached a bit of flavour after a while it was much nicer after I beat them up a bit with the stick, so next time out I sliced the skin a bit first, which made for a nicer drink.  If you do give this a go let me know your thoughts on the cherries, or indeed what red fruit you think works best.
